Description

Delicious and crispy zucchini and polenta fritters that make a perfect appetizer or side dish. These fritters combine grated zucchini with creamy polenta, flavorful Parmesan, and fresh herbs, pan-fried to golden perfection for a delightful crunchy texture on the outside and tender inside.

Ingredients

Scale

Main Ingredients

  • 2 medium zucchinis, grated
  • 1 cup cooked and cooled polenta
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 green onions, finely chopped
  • 1 garlic clove, minced
  • 1 large egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley

For Cooking

  • Vegetable oil, for pan-frying

Instructions

  1. Drain Zucchini: Place the grated zucchini in a clean towel and squeeze out as much moisture as possible to prevent soggy fritters.
  2. Mix Ingredients: In a large bowl, combine the drained zucchini, cooked polenta, flour, Parmesan cheese, green onions, minced garlic, egg, salt, black pepper, and parsley. Mix thoroughly until well combined.
  3. Heat Oil: Heat a thin layer of vegetable oil in a nonstick skillet over medium heat to prepare for frying.
  4. Form Fritters: Scoop 2 to 3 tablespoons of the mixture per fritter into the pan, gently flattening each with a spatula to form patties.
  5. Cook Fritters: Fry the fritters for 3 to 4 minutes on each side, or until they are golden brown and crisp. Use a spatula to carefully flip them.
  6. Drain and Serve: Transfer the cooked fritters to a plate lined with paper towels to absorb excess oil. Serve warm with sour cream, yogurt, or your favorite dipping sauce.

Notes

  • Be sure to squeeze out as much water as possible from the zucchini to avoid watery fritters.
  • Parmesan cheese is optional but adds a nice savory flavor; omit if vegan or lactose intolerant.
  • You can substitute all-purpose flour with gluten-free flour for a gluten-free version.
  • Cook the fritters on medium heat to ensure they cook through without burning.
  • Serve immediately for best texture; fritters can be reheated in a skillet or oven to regain crispness.
