- 2 medium oranges (seedless, preferably organic)
- 6 large eggs
- 1 cup granulated sugar
- 2 1/2 cups almond flour (finely ground almonds)
- 1 teaspoon baking powder
- 1/4 teaspoon salt

Instructions
- Prepare the Oranges: Place whole oranges in a pot of water, bring to a boil, then reduce heat and simmer for 1 hour. Drain and let them cool completely. Once cool, cut the oranges into chunks (with peel) and remove any seeds.
- Blend the Oranges: Blend the entire oranges in a food processor or blender until smooth.
- Preheat and Prepare: Preheat oven to 350°F (175°C). Grease and line a 9-inch springform pan.
- Mix the Batter: In a large mixing bowl, beat the eggs and sugar until light and fluffy, about 2–3 minutes. Fold in the orange purée, almond flour, baking powder, and salt until fully combined.
- Bake: Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
Notes
- For a more intense citrus flavor, you can add the zest of 1 lemon to the batter.
- This cake gets even better the next day as the flavors deepen.
