Scale
Crust
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Cheesecake Filling
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1/2 cup white chocolate chips, melted
Topping
- 12–16 fresh strawberries, hulled and sliced
- Additional white chocolate, for drizzling (optional)
Instructions
- Prepare the crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix well until fully incorporated.
- Form the crust: Press the crumb mixture firmly into the bottom of mini muffin tins or silicone molds using the back of a spoon to create compact crusts. Chill in the refrigerator for about 15 minutes to set.
- Make the cheesecake filling: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract using an electric mixer until smooth and creamy.
- Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined and smooth.
- Assemble the bites: Spoon the cheesecake filling onto the chilled crusts, filling each mold nearly to the top. Smooth the surface with a spatula.
- Add strawberries: Place a slice of fresh strawberry on top of each cheesecake bite for a refreshing and fruity garnish.
- Drizzle white chocolate: Drizzle the melted white chocolate chips over the tops of the cheesecake bites to enhance sweetness and decoration.
- Chill to set: Refrigerate the bites for at least 2 hours, or until firm and set.
- Serve: Carefully remove the cheesecake bites from the molds and serve chilled. Enjoy this creamy, fruity treat!
Notes
- Ensure the cream cheese is softened to room temperature for a smooth filling.
- Chilling the crust firmly prevents it from crumbling when eating.
- You can substitute fresh strawberries with other fresh berries if desired.
- The additional white chocolate drizzle is optional but adds a nice decorative touch.
- Store leftovers covered in the refrigerator for up to 3 days.
