  • 24 chocolate sandwich cookies, crushed into fine crumbs
  • 4 tablespoons unsalted butter, melted

For the cheesecake filling:

  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 tablespoons unsweetened cocoa powder
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 teaspoons white vinegar
  • 2 tablespoons red food coloring

For the topping:

  • 1 1/2 cups heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings or heart-shaped sprinkles for garnish

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Make the crust: Combine cookie crumbs and melted butter in a bowl. Press firmly into the bottom of the pan to form the crust. Bake for 10 minutes and set aside to cool.
  3. Prepare the filling: Beat cream cheese until smooth. Add sugar and cocoa powder, then mix well. Beat in eggs, followed by sour cream, buttermilk, vanilla, vinegar, and red food coloring until smooth.
  4. Bake the cheesecake: Pour filling over the crust. Place the pan in a larger roasting pan with water halfway up. Bake for 55–65 minutes. Cool in the oven before refrigerating.
  5. Make the topping: Whip cream, powdered sugar, and vanilla until stiff peaks form. Spread over cheesecake and garnish with chocolate shavings or sprinkles.
