Description

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups mashed ripe bananas (about 3 bananas)
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup chopped macadamia nuts (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and grease a 9×5-inch loaf pan.
  2. Prepare dry ingredients: In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. Cream butter and sugars: In a large bowl, cream butter with granulated and brown sugars until light and fluffy.
  4. Add eggs and bananas: Beat in eggs one at a time, then mix in vanilla and mashed bananas.
  5. Combine wet and dry: Stir in crushed pineapple and coconut, then gradually add dry ingredients, mixing until just combined.
  6. Add nuts and bake: Fold in macadamia nuts, pour batter into pan, and bake for 60–70 minutes until a toothpick comes out clean.
  7. Cool and serve: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • For added flavor, toast the coconut or macadamia nuts before adding.
  • This recipe can also be made into muffins—bake at 350°F for 18–22 minutes.
