Ribeye Steak:

  • 2 boneless ribeye steaks (1 to inches thick)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme or rosemary (optional)

French Onions:

  • 2 large yellow onions (thinly sliced)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth or water (to deglaze)

Fries:

  • 4 medium russet potatoes (cut into thin fries)
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder

Instructions

  1. Make the French onions: In a large skillet, heat butter and olive oil over medium-low heat. Add the sliced onions, salt, sugar, and pepper. Cook slowly for 25–30 minutes until caramelized. Deglaze with broth/water and cook for another 5–10 minutes.
  2. Cook the fries: Preheat oven to 425°F. Toss potatoes with oil, salt, paprika, and garlic powder. Bake for 35–40 minutes.
  3. Cook the steak: Season ribeyes and sear in a skillet for 3–4 minutes per side. Rest before slicing.
  4. To serve: Top ribeyes with caramelized onions. Serve with fries.

  • You can melt Swiss or Gruyère cheese over the steaks for a French onion steak twist.
