  • 1 lb fresh lion’s mane mushrooms, torn into chunks

Marinade:

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon soy sauce or tamari

Instructions

  1. Preheat the Grill: Preheat your Traeger grill to 375°F (190°C) with the lid closed for 15 minutes.
  2. Prepare the Mushrooms: Clean the lion’s mane mushrooms and tear them into large chunks.
  3. Marinate: In a bowl, toss the mushrooms with olive oil, melted butter, garlic, smoked paprika, salt, black pepper, thyme, and soy sauce.
  4. Grill: Place the mushrooms on the grill grates or in a grill basket. Grill for 20–25 minutes, flipping halfway through.
  5. Serve: Remove from the grill and squeeze fresh lemon juice over the mushrooms before serving.
