Main Ingredients:

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Filling:

  • 1 cup sour cream
  • 1/2 cup whole milk
  • 4 tablespoons butter
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 6 slices cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven: Preheat oven to 400°F (200°C).
  2. Prepare the potatoes: Scrub potatoes, rub with olive oil, season with salt and pepper. Bake for 50–60 minutes until tender.
  3. Prepare the filling: Scoop out potato flesh, mix with butter, sour cream, milk, half of cheddar, half of bacon, green onions, and garlic powder.
  4. Stuff the potatoes: Fill potato shells with the mixture, top with remaining cheddar and bacon.
  5. Bake: Bake for 15 minutes until cheese is melted. Serve warm.
