Main Ingredients:
- 4 large russet potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Filling:
- 1 cup sour cream
- 1/2 cup whole milk
- 4 tablespoons butter
- 1 1/2 cups shredded sharp cheddar cheese, divided
- 6 slices cooked bacon, crumbled
- 1/4 cup chopped green onions
- 1/2 teaspoon garlic powder
Instructions
- Preheat the oven: Preheat oven to 400°F (200°C).
- Prepare the potatoes: Scrub potatoes, rub with olive oil, season with salt and pepper. Bake for 50–60 minutes until tender.
- Prepare the filling: Scoop out potato flesh, mix with butter, sour cream, milk, half of cheddar, half of bacon, green onions, and garlic powder.
- Stuff the potatoes: Fill potato shells with the mixture, top with remaining cheddar and bacon.
- Bake: Bake for 15 minutes until cheese is melted. Serve warm.
