Description

These St. Patrick’s Day cookies are the perfect festive treat, combining the flavors of mint and chocolate in a delightful cookie. With a soft center and a hint of peppermint, these green-hued cookies are sure to brighten up any celebration.

  • 1 teaspoon baking soda

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup shortening
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon peppermint extract
  • 6 drops green food coloring (more if desired)

Mix-Ins:

  • 1 1/2 cups white chocolate chips
  • 1 cup green or mint chocolate candies (such as M&M’s)
  • 1/2 cup chopped Andes mints or mint baking chips

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking soda, and salt.
  3. Mix Wet Ingredients: In a large mixing bowl, cream butter, shortening, brown sugar, and granulated sugar until light and fluffy. Beat in eggs one at a time, then add vanilla, peppermint extract, and food coloring, mixing until evenly tinted.
  4. Combine Dry and Wet Mixtures: Gradually add dry ingredients to wet mixture and mix until combined.
  5. Add Mix-Ins: Fold in white chocolate chips, chocolate candies, and Andes mints.
  6. Bake: Drop rounded tablespoons of dough onto baking sheets, spacing about 2 inches apart. Bake for 9 to 11 minutes until edges are set but centers remain soft.
  7. Cool and Enjoy: Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
