Salmon Patties:

  • 2 (6-ounce) cans salmon, drained and flaked (or 1 1/2 cups cooked fresh salmon)
  • 1/2 cup breadcrumbs or crushed crackers
  • 1/4 cup finely chopped onion
  • 2 tablespoons chopped fresh parsley
  • 2 large eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Mix Ingredients: In a large bowl, combine salmon, breadcrumbs, onion, parsley, eggs, mayonnaise, mustard, lemon juice, garlic powder, salt, and pepper. Mix well.
  2. Form Patties: Shape the mixture into 6 patties. Heat oil in a skillet over medium heat.
  3. Cook Patties: Cook patties for 3–4 minutes per side until golden and cooked through. Drain on paper towels.
