Salmon Patties:
- 2 (6-ounce) cans salmon, drained and flaked (or 1 1/2 cups cooked fresh salmon)
- 1/2 cup breadcrumbs or crushed crackers
- 1/4 cup finely chopped onion
- 2 tablespoons chopped fresh parsley
- 2 large eggs
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- Mix Ingredients: In a large bowl, combine salmon, breadcrumbs, onion, parsley, eggs, mayonnaise, mustard, lemon juice, garlic powder, salt, and pepper. Mix well.
- Form Patties: Shape the mixture into 6 patties. Heat oil in a skillet over medium heat.
- Cook Patties: Cook patties for 3–4 minutes per side until golden and cooked through. Drain on paper towels.
- Serve: Serve warm with desired accompaniments.

- Use gluten-free breadcrumbs if required
