Filling:
- 1/2 cup brown sugar, packed
- 1 tablespoon ground cinnamon
- 2 tablespoons unsalted butter, melted
Glaze:
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/4 teaspoon vanilla extract
Instructions
- Dough: In a medium bowl, whisk together flour, baking powder, and salt. In a large mixing bowl, cream softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla. Gradually add the dry ingredients until a soft dough forms. Divide the dough, chill.
- Roll: On a floured surface, roll out dough into rectangles. Brush with melted butter, sprinkle with brown sugar and cinnamon. Roll tightly. Chill.
- Bake: Slice chilled dough, bake at 350°F for 10-12 minutes. Cool.
- Glaze: Whisk powdered sugar, milk, and vanilla. Drizzle over cookies.
