Soup Base
- 1 tablespoon olive oil
- 1 small onion, diced

- 2 cups cooked chicken, shredded (rotisserie or boiled)
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano

Pasta and Garnish
- 2 cups egg noodles
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add diced onion, minced garlic, sliced carrots, and celery. Cook for 5 to 6 minutes, stirring occasionally, until the vegetables are softened and aromatic.
- Add Broth and Bring to Boil: Pour in the chicken broth and increase the heat to bring the mixture to a rolling boil.
- Simmer with Chicken and Herbs: Stir in dried thyme, dried oregano, and season with salt and black pepper to taste. Add the shredded cooked chicken. Reduce heat to low and let the soup simmer gently for 10 minutes to meld the flavors together.
- Cook Noodles: Add the egg noodles to the pot and continue cooking for 8 to 10 minutes until the noodles are tender but still slightly firm to the bite.
- Adjust Seasoning and Garnish: Taste the soup and adjust seasoning if needed. Just before serving, stir in chopped fresh parsley for a bright, fresh flavor.
- Serve: Ladle the hot soup into bowls and serve with crusty bread or crackers for a delightful meal.
