Marinade:

  • 1/3 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons lemon juice
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Chicken:

  • 23 pounds boneless, skinless chicken breasts or thighs

Instructions

  1. Mix Marinade: In a medium bowl, whisk together olive oil, soy sauce, lemon juice, balsamic vinegar, Worcestershire sauce, Dijon mustard, honey, garlic, oregano, black pepper, and red pepper flakes if using.
  2. Marinate Chicken: Place the chicken in a large resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes, preferably 4–8 hours for best flavor.
  3. Cook Chicken: Remove chicken from marinade and discard excess marinade. Grill, bake, or pan-sear chicken until cooked through and internal temperature reaches 165°F. Let rest for a few minutes before serving.
