Ingredients
Scale
Muffin Batter
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup milk
- 1/3 cup vegetable oil or melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
Cinnamon-Sugar Swirl
- 1/4 cup brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1 tablespoon melted butter
Optional Topping
- 1 tablespoon granulated sugar mixed with 1/2 teaspoon cinnamon
Instructions
- Preheat Oven and Prepare Muffin Tin: Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon until evenly combined.
- Mix Wet Ingredients: In another bowl, whisk together the milk, vegetable oil or melted butter, eggs, and vanilla extract until the mixture is smooth and well blended.
- Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir just until combined. Be careful not to overmix to keep the muffins light and tender.
- Prepare Cinnamon-Sugar Swirl: In a small bowl, mix the brown sugar, ground cinnamon, and melted butter until combined to create the swirl mixture.
- Fill Muffin Cups and Add Swirl: Fill each muffin cup halfway with the batter. Add about 1 teaspoon of the cinnamon-sugar swirl mixture to each, then top with more batter to fill each cup almost to the top.
- Create Swirled Effect: Use a toothpick or knife to gently swirl the cinnamon mixture through the batter in each muffin cup to create a marbled effect.
- Add Optional Topping: Sprinkle the optional cinnamon-sugar topping mixture over each muffin for added texture and sweetness.
- Bake the Muffins: Bake in the preheated oven for 18–20 minutes until a toothpick inserted into the center comes out clean and the muffins are golden brown.
- Cool and Serve: Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely or serve warm.
Notes
- For extra moisture, stir in 1/2 cup sour cream or plain yogurt with the wet ingredients.
- Add chopped pecans or walnuts to the cinnamon-sugar swirl mixture for added crunch and flavor.
