Description

Delicious and healthy sugar-free fudge made with unsweetened cocoa powder, nut butter, and erythritol. This easy no-bake recipe is perfect for a guilt-free treat that’s rich, creamy, and sweetened without sugar.

Ingredients

Scale

Fudge Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup nut butter (almond or peanut)
  • 1 cup granulated erythritol
  • 2 tsp pure vanilla extract
  • 1/4 tsp salt
  • 1/2 cup refined coconut oil

Instructions

  1. Prepare Workspace: Gather all your ingredients and tools including mixing bowls, measuring cups, and an 8×8 baking dish lined with parchment paper to prevent sticking.
  2. Melt Nut Butter and Coconut Oil: In a microwave-safe bowl, combine nut butter and coconut oil. Heat in 30-second intervals, stirring each time, until the mixture is completely melted and smooth.
  3. Mix Dry Ingredients: Whisk in the unsweetened cocoa powder and granulated erythritol until fully incorporated, creating a thick but pourable mixture with no lumps.
  4. Add Flavorings: Stir in the pure vanilla extract and salt until the mixture is even and no dry spots remain.
  5. Pour and Spread: Pour the fudge batter into the prepared baking dish and spread evenly with a spatula, smoothing the top.
  6. Chill to Set: Refrigerate the fudge for at least one hour until firm and set. Once chilled, cut into 16 squares and enjoy your sugar-free treat.

Notes

  • You can substitute almond butter with peanut butter or any other nut or seed butter of your choice.
  • Use refined coconut oil to avoid a strong coconut taste; unrefined coconut oil will impart more coconut flavor.
  • Store the fudge in an airtight container in the refrigerator for up to 2 weeks.
  • For a firmer fudge, freeze for 10-15 minutes before serving.
  • If you prefer a sweeter fudge, adjust the erythritol amount according to your taste.
