Fudge Ingredients
- 1 cup unsweetened cocoa powder
- 1 cup nut butter (almond or peanut)
- 1 cup granulated erythritol
- 2 tsp pure vanilla extract
- 1/4 tsp salt
- 1/2 cup refined coconut oil
Instructions
- Prepare Workspace: Gather all your ingredients and tools including mixing bowls, measuring cups, and an 8×8 baking dish lined with parchment paper to prevent sticking.
- Melt Nut Butter and Coconut Oil: In a microwave-safe bowl, combine nut butter and coconut oil. Heat in 30-second intervals, stirring each time, until the mixture is completely melted and smooth.
- Mix Dry Ingredients: Whisk in the unsweetened cocoa powder and granulated erythritol until fully incorporated, creating a thick but pourable mixture with no lumps.
- Add Flavorings: Stir in the pure vanilla extract and salt until the mixture is even and no dry spots remain.
- Pour and Spread: Pour the fudge batter into the prepared baking dish and spread evenly with a spatula, smoothing the top.
- Chill to Set: Refrigerate the fudge for at least one hour until firm and set. Once chilled, cut into 16 squares and enjoy your sugar-free treat.
Notes
- You can substitute almond butter with peanut butter or any other nut or seed butter of your choice.
- Use refined coconut oil to avoid a strong coconut taste; unrefined coconut oil will impart more coconut flavor.
- Store the fudge in an airtight container in the refrigerator for up to 2 weeks.
- For a firmer fudge, freeze for 10-15 minutes before serving.
- If you prefer a sweeter fudge, adjust the erythritol amount according to your taste.
