  • 2 tablespoons butter

  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken (optional)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon poultry seasoning

For the Dumplings:

  • 3 cups leftover stuffing
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 2 tablespoons chopped parsley (optional)

Instructions

  1. Soup: In a large soup pot, melt butter over medium heat. Add onion, carrots, and celery. Sauté until tender. Stir in garlic. Pour in chicken broth, add thyme, salt, pepper, and poultry seasoning. Simmer.
  2. Dumplings: Mix stuffing, egg, flour, and parsley. Form into balls. Drop into simmering soup. Cook covered for 10–12 minutes.
  3. Taste and adjust seasoning. Serve hot, garnished with parsley.
