For the Strawberry Syrup:
- 1 cup fresh strawberries, hulled and chopped
- 2 tablespoons sugar
- 1 tablespoon lemon juice
- 1/4 cup water
For Serving:
- 1 cup club soda or sparkling water (chilled)
- Ice for serving
- Fresh mint and extra strawberries for garnish (optional)
Instructions
- Cook the Strawberry Syrup: In a small saucepan, combine strawberries, sugar, lemon juice, and water. Cook over medium heat for 5–7 minutes until the strawberries break down and the mixture thickens slightly.
- Prepare the Syrup: Mash the strawberries gently with a spoon and let the syrup cool. Strain through a fine mesh sieve to remove the pulp, if desired.
- Assemble the Soda: Fill a glass with ice and add 2–3 tablespoons of the strawberry syrup. Top with chilled club soda and stir gently.
- Garnish and Serve: Garnish with fresh mint or sliced strawberries if desired. Serve immediately.
Notes
- Adjust sweetness to taste by adding more or less sugar.
- The strawberry syrup can be made ahead and stored in the refrigerator for up to 5 days.
