  • ¾ cup vegetable oil
  • 4 large eggs
  • ½ cup milk

Cheesecake Layer

  • 2 (8 oz) packages cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream

Cream Cheese Frosting

  • 1 (8 oz) package cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons heavy cream

Strawberry Shortcake Crumble Topping

  • 15 Golden Oreos, crushed
  • 2 tablespoons butter, melted
  • 1 (3 oz) box strawberry gelatin powder

Instructions

  1. Make the cheesecake layer: Preheat oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream until fully combined. Pour into the prepared pan and bake for 40–45 minutes until the center is just set. Let cool, then refrigerate for at least 4 hours or overnight.
  2. Make the strawberry cake layers: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, combine the cake mix, strawberry gelatin, oil, eggs, milk, and mashed strawberries. Beat for 2 minutes until smooth. Divide evenly between the pans and bake for 25–28 minutes. Let cool completely.
  3. Make the frosting: In a large bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and cream until fluffy and spreadable.
  4. Assemble the cake: Place one strawberry cake layer on a serving plate. Carefully remove the chilled cheesecake from the springform pan and place it on top. Add the second strawberry cake layer. Frost the top and sides of the cake with cream cheese frosting.
  5. Make the crumble topping: Combine crushed Golden Oreos with melted butter and strawberry gelatin powder. Mix until evenly coated. Sprinkle generously over the top and sides of the frosted cake.
