Strawberry Filling:

Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Mix Oat Mixture: In a large bowl, combine oats, flour, brown sugar, baking soda, and salt. Add melted butter, egg, and vanilla extract, mix until crumbly.
- Layer Crust: Press half of the oat mixture into the bottom of the pan.
- Prepare Filling: In a separate bowl, mix strawberries, honey/maple syrup, lemon juice, and cornstarch. Spread over the crust.
- Top with Oat Mixture: Sprinkle the remaining oat mixture over the filling and press gently.
- Bake: Bake for 35–40 minutes until golden and bubbly. Cool before slicing.
