Gelatin Layer and Topping
- 1 package (3 oz) strawberry gelatin (Jell-O)
- 1/2 cup boiling water
- 1/2 cup cold water
- 1 1/2 cups fresh strawberries, sliced
- 1/2 cup fresh strawberries, chopped (for topping)
Instructions
- Prepare the Cream Cheese Mixture: In a medium-sized bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, and continue beating until well combined. Gently fold in the thawed Cool Whip until the mixture is smooth and fluffy.
- Dissolve the Gelatin: In a separate small bowl, dissolve the strawberry gelatin in 1/2 cup of boiling water. Stir until fully dissolved. Add 1/2 cup cold water and mix well. Let the gelatin mixture cool to room temperature, about 10 minutes.
- Fill the Crust: Pour the cream cheese and Cool Whip mixture into the prepared graham cracker crust. Spread it evenly to cover the entire crust.
- Add Strawberries to Gelatin and Pour: Once the gelatin has cooled, gently spoon the sliced strawberries into the gelatin mixture, then pour the gelatin over the pie, spreading it evenly on top of the cream cheese filling.
- Refrigerate to Set: Refrigerate the pie for at least 4 hours or until the gelatin is set and the pie is firm.
- Add Garnish and Serve: Once the pie is set, top with chopped fresh strawberries for garnish. Serve chilled and enjoy!
