Ingredients
Scale
Pastry
- 1 sheet puff pastry
Filling
- 4 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup crumbled feta cheese
- 2 large eggs
- 2 cloves garlic, minced
- 1/4 tsp nutmeg
- Salt & pepper to taste
- Olive oil for sautéing
Instructions
- Preheat the oven: Set your oven to 400°F (200°C) to ensure it reaches the perfect temperature for baking the pie.
- Sauté spinach and garlic: Heat a pan over medium heat and add a drizzle of olive oil. Sauté the minced garlic until fragrant, about 1 minute, then add the chopped spinach. Cook until wilted, approximately 3 minutes. Remove from heat and let cool slightly.
- Prepare the filling: In a mixing bowl, combine the sautéed spinach and garlic with ricotta cheese, crumbled feta, eggs, nutmeg, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
- Assemble the pie: Roll out one sheet of puff pastry into a greased pie dish. Spoon the prepared filling evenly over the pastry. Cover the filling with another sheet of puff pastry. Seal the edges by pressing with your fingers or a fork to prevent filling leakage during baking.
- Bake the pie: Place the assembled pie into the preheated oven and bake for 25 to 30 minutes, or until the pastry is golden brown and puffed up.
- Cool and serve: After baking, remove the pie from the oven and allow it to cool for about 10 minutes to set before slicing and serving.
Notes
- For extra flavor, you can add a sprinkle of grated parmesan to the filling mix.
- If puff pastry is not available, phyllo dough can be used as an alternative, but adjust baking times accordingly.
- Make sure to squeeze out excess water from cooked spinach to avoid a soggy filling.
- This pie can be served warm or at room temperature.
- To make it vegetarian-friendly, ensure the eggs and cheese align with your dietary preferences.
