Description

This Spinach Stuffed Pie is a delicious and savory pastry filled with a creamy mixture of sautéed spinach, ricotta, feta cheese, and eggs, all gently flavored with garlic and nutmeg. Perfect as a hearty appetizer, side dish, or a light main course, it’s baked to golden perfection with flaky puff pastry.

Ingredients

Scale

Pastry

  • 1 sheet puff pastry

Filling

  • 4 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup crumbled feta cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1/4 tsp nutmeg
  • Salt & pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to ensure it reaches the perfect temperature for baking the pie.
  2. Sauté spinach and garlic: Heat a pan over medium heat and add a drizzle of olive oil. Sauté the minced garlic until fragrant, about 1 minute, then add the chopped spinach. Cook until wilted, approximately 3 minutes. Remove from heat and let cool slightly.
  3. Prepare the filling: In a mixing bowl, combine the sautéed spinach and garlic with ricotta cheese, crumbled feta, eggs, nutmeg, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  4. Assemble the pie: Roll out one sheet of puff pastry into a greased pie dish. Spoon the prepared filling evenly over the pastry. Cover the filling with another sheet of puff pastry. Seal the edges by pressing with your fingers or a fork to prevent filling leakage during baking.
  5. Bake the pie: Place the assembled pie into the preheated oven and bake for 25 to 30 minutes, or until the pastry is golden brown and puffed up.
  6. Cool and serve: After baking, remove the pie from the oven and allow it to cool for about 10 minutes to set before slicing and serving.

Notes

  • For extra flavor, you can add a sprinkle of grated parmesan to the filling mix.
  • If puff pastry is not available, phyllo dough can be used as an alternative, but adjust baking times accordingly.
  • Make sure to squeeze out excess water from cooked spinach to avoid a soggy filling.
  • This pie can be served warm or at room temperature.
  • To make it vegetarian-friendly, ensure the eggs and cheese align with your dietary preferences.
