Instructions
- Prepare the pickling brine: In a saucepan, combine the white vinegar, water, sugar, salt, black peppercorns, mustard seeds, coriander seeds, and crushed red pepper flakes. Bring this mixture to a boil over medium-high heat, stirring occasionally until the sugar and salt dissolve completely. Once boiling, remove the saucepan from heat and allow the brine to cool slightly.
- Assemble the jar: Using a clean quart-sized glass jar or container, begin layering the peeled hard-boiled eggs alternated with the thinly sliced onion, garlic, jalapeños, and the dried chili pepper, if using, to evenly distribute the flavors.
