Quesadillas
- 4 large flour tortillas
- 200g shredded cheese (cheddar or Monterey Jack)

Instructions
- Prepare the skillet and sauté vegetables: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, minced garlic, and chopped bell pepper. Sauté until softened and fragrant, about 3-5 minutes.
- Cook the minced meat: Add the ground beef to the skillet along with chili powder, cumin, salt, and pepper. Cook, breaking the meat apart with a spatula, until browned and fully cooked through.
- Assemble the quesadillas: Place a flour tortilla in the skillet. Sprinkle a generous amount of shredded cheese evenly across the tortilla’s surface. Spoon a portion of the mince mixture over the cheese, then add another layer of cheese on top.
- Fold the tortilla: Carefully fold the tortilla in half to encase the filling and cheese.
- Cook the quesadillas: Cook the folded quesadilla for 3-4 minutes on one side until golden brown, then carefully flip and cook the other side for another 3-4 minutes until golden brown and the cheese has melted.
- Repeat the process: Repeat the assembling and cooking steps for the remaining tortillas and filling.
- Serve and garnish: Remove the quesadillas from the skillet, cut into wedges, and garnish with fresh cilantro if desired. Serve warm with sour cream or salsa on the side.
