Instructions

  1. Prepare the Spiced Chicken: Mix cumin, paprika, coriander, turmeric, salt, and pepper. Rub onto chicken thighs.
  2. Cook the Chicken: Sear chicken in olive oil until cooked through. Set aside.
  3. Sauté Aromatics: In the same pan, sauté onion, garlic, and ginger.
  4. Add Rice and Vegetables: Stir in rice, broth, bell pepper, zucchini, carrot, and peas. Simmer until rice is tender.
