Description

Delightful Spanakopita Puff Pastry Swirls combine flaky puff pastry with a savory blend of spinach, feta, mozzarella, and fresh herbs. These easy-to-make swirls are perfect as appetizers or snack bites, featuring a golden, crispy exterior and rich, cheesy filling with hints of garlic and dill.

Ingredients

Scale

For the Filling

  • 1 tablespoon olive oil
  • 8 oz baby spinach, roughly chopped
  • 2 scallions, chopped
  • Salt and pepper, to taste
  • 7 oz feta cheese, crumbled
  • 3/4 cup shredded mozzarella cheese
  • 2 tablespoons dill, chopped
  • 1/2 teaspoon garlic powder

For the Pastry

  • 1 sheet puff pastry, defrosted
  • 1 egg + 1 tablespoon water, lightly beaten (egg wash)
  • Flour, for dusting surface

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add the chopped scallions and sauté for 1 minute until fragrant. Add the baby spinach, season with salt and pepper, and cook until mostly wilted. Remove from heat and transfer to a plate. Drain any excess liquid and pat dry to prevent soggy pastry.
  3. Prepare Filling: In a large bowl, combine the sautéed spinach mixture with crumbled feta, shredded mozzarella, chopped dill, and garlic powder. Mix well to distribute the flavors evenly.
  4. Roll Puff Pastry: Lightly flour a clean flat surface and roll out the puff pastry slightly to even out the edges. Brush the entire surface with the egg wash to help seal and brown the pastry.
  5. Assemble Swirls: Evenly sprinkle the spinach-cheese filling over the egg-washed puff pastry. Starting from one short edge, carefully roll the dough up like a cinnamon roll, creating a tight spiral.
  6. Slice and Bake: Slice the rolled dough into 1-inch thick swirls and place them cut side down on the prepared baking sheet. Brush the tops and sides of the swirls with the remaining egg wash to enhance color and crispness.
  7. Bake: Bake in the preheated oven for about 20 minutes, or until the swirls are puffed and golden brown. Remove from the oven and allow to cool slightly before serving.

Notes

  • Ensure the spinach is well drained to avoid soggy pastry swirls.
  • Feel free to substitute fresh herbs like parsley if dill is unavailable.
  • These swirls can be prepared ahead of time and baked just before serving.
  • For a crispier crust, you can bake on a wire rack placed on the baking sheet.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a toaster oven.
