Chicken Filling:
- 2 cups cooked chicken breast, shredded or diced
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels, fresh or frozen
- 1 red bell pepper, diced
- 1/2 cup red onion, diced
- 1/2 cup salsa
- 1/2 cup shredded cheddar or Mexican blend cheese
- 2 tablespoons sour cream or Greek yogurt
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
Additional Ingredients:
- 4 large flour tortillas
- Fresh cilantro and lime wedges for serving
Instructions
- Prepare the Filling: In a large bowl, combine chicken, black beans, corn, bell pepper, red onion, salsa, cheese, sour cream, chili powder, cumin, garlic powder, and salt. Mix until well combined.
- Assemble the Wraps: Warm tortillas slightly to make them pliable. Spoon about 1/4 of the mixture into the center of each tortilla. Fold in the sides and roll up tightly to form a wrap.
- Serve: Serve immediately with cilantro and lime wedges, or wrap in foil for a grab-and-go meal.
