Scale
Main Ingredients
- 3 eggs
- 15g sugar (1 tbsp)
- 1g salt (1/4 tsp)
- 20g all-purpose flour (2 tbsp)
- 180ml milk
- 1 tsp vanilla extract
- Unsalted butter (for greasing)
- Sugar (for dusting)
Meringue
- 3 egg whites
- 35g sugar
Garnish
- Powdered sugar (for garnish)
Instructions
- Preheat and Prepare: Preheat your oven to 200°C (390°F). Grease a baking dish or individual ramekins thoroughly with unsalted butter, then dust them evenly with sugar to prevent sticking and add a subtle sweetness.
- Mix Base Batter: In a large bowl, whisk together the 3 whole eggs, 15g sugar, 1g salt, all-purpose flour, milk, and vanilla extract until the mixture is completely smooth and homogenous.
- Whip Egg Whites: In a separate clean bowl, use a mixer to whisk the 3 egg whites until soft peaks form. Gradually add the 35g sugar while continuing to whisk until stiff peaks form, creating a stable meringue.
- Fold Mixtures: Gently fold the whipped egg whites into the egg mixture with a spatula, taking care not to deflate the meringue. Fold until just combined to maintain the airy texture.
- Fill and Bake: Pour the combined batter into the prepared baking dish or ramekins, filling about three-quarters full to allow room for rising.
- Bake: Place in the preheated oven and bake for 13 to 15 minutes, or until the top turns golden and the center is set but still soft.
- Garnish and Serve: Remove from the oven and dust the top lightly with powdered sugar before serving warm for best flavor and texture.
Notes
- Ensure egg whites are whipped to stiff peaks to give the dessert its signature light texture.
- Folding should be done gently to avoid deflating the meringue.
- You can use ramekins for individual portions or a larger baking dish for a single dessert to share.
- Serve immediately after baking, as the texture softens with time.
- For an extra flavor twist, add a pinch of cinnamon or nutmeg to the base batter.
