  • 4 tablespoons olive oil
  • 6 garlic cloves, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon coarse kosher salt
  • 2 teaspoons black pepper
  • 1 teaspoon smoked paprika

For Au Jus:

  • 1 cup beef broth
  • 1 cup red wine (optional)

Instructions

  1. Preparation: Remove prime rib from the refrigerator and let it sit at room temperature for 2 hours. Preheat oven to 450°F (230°C).
  2. Seasoning: In a bowl, combine olive oil, garlic, rosemary, thyme, salt, pepper, and paprika to make a paste. Rub over the prime rib.
  3. Roasting: Place roast bone-side down in a roasting pan. Roast at 450°F for 15 minutes, then reduce heat to 325°F and continue cooking for 1 1/2 to 2 hours.
  4. Resting: Transfer roast to a cutting board, tent with foil, and let rest for 20 minutes before slicing.
  5. Au Jus: For au jus, simmer beef broth and red wine in the roasting pan until slightly reduced. Serve slices of prime rib with au jus.
