- 1 (8 oz) block cream cheese (cubed and softened)
- 1 (20 oz) package refrigerated cheese tortellini
- 2 cups fresh spinach (roughly chopped)
- 1/4 cup grated Parmesan cheese (for serving)
Instructions
- Sauté Aromatics: In a skillet, sauté onion in olive oil until soft. Add garlic and cook briefly.
- Prepare Slow Cooker: Transfer onion, garlic, tomatoes, broth, herbs, seasonings to the slow cooker. Cook on low for 4-5 hours.
