Beef:
- 2 pounds beef chuck roast, cut into 1 1/2-inch cubes
Seasonings:
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 tablespoon tomato paste
Liquid and Base:
- 1 (14 oz) can diced tomatoes
- 1 (13.5 oz) can coconut milk
- 1 cup beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Garnish:
- Chopped cilantro for garnish
Instructions
- Prepare the Beef: In a skillet, brown the beef cubes in oil. Transfer to the slow cooker.
- Sauté Aromatics: Sauté onion, garlic, and ginger in the skillet. Stir in spices and tomato paste.
- Combine Ingredients: Add onion mixture, tomatoes, coconut milk, broth, salt, and pepper to the slow cooker.
- Cook: Cover and cook on LOW for 8 hours or HIGH for 4–5 hours.
- Serve: Serve over rice or with naan, garnished with cilantro.
Notes
- For a thicker curry, remove the lid for the last 30 minutes of cooking or use a cornstarch slurry.
- Leftovers freeze well and taste better the next day.
