Description

For the Shrimp Boil Foil Packets:

  • 1 pound large shrimp (peeled and deveined, tails on or off)
  • 12 ounces smoked sausage (sliced into rounds)
  • 2 ears corn (cut into thirds, then halved)
  • 1 pound baby potatoes (halved or quartered)
  • 3 tablespoons olive oil
  • 1 tablespoon Old Bay seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley
  • Lemon wedges for serving
  • Heavy-duty aluminum foil

Instructions

  1. Preheat the Grill or Oven: Preheat the grill to medium-high heat (about 400°F), or preheat your oven to 425°F.
  2. Parboil Potatoes: Boil a pot of salted water and parboil the potatoes for 8–10 minutes until just tender. Drain and set aside.
  3. Mix Ingredients: In a large bowl, combine shrimp, sausage, corn, and cooked potatoes. Drizzle with olive oil and season with Old Bay, garlic powder, smoked paprika, salt, and pepper. Toss well.
  4. Prepare Foil Packets: Tear 4 large sheets of foil (12×18 inches each). Divide mixture among the sheets, fold up the sides to seal tightly.
  5. Cook: Place packets on the grill or in the oven. Cook for 15–18 minutes until shrimp are pink, veggies are tender.
  6. Serve: Open packets carefully, garnish with parsley, and serve with lemon wedges.
