Description

A quick and vibrant shrimp and asparagus stir fry tossed in a tangy lemon sauce. This easy-to-make dish combines succulent shrimp, crisp tender asparagus, and a flavorful blend of garlic, ginger, and bright lemon, perfect for a healthy weeknight meal.

Ingredients

Scale

Main Ingredients

  • 4 tablespoons olive oil (divided)
  • 1 pound large raw shrimp (peeled and deveined)
  • 1 pound asparagus (ends trimmed, cut into 23 inch pieces)
  • 1/2 teaspoon salt (divided)
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic

Lemon Sauce Ingredients

  • 2/3 cup chicken stock
  • 1 tablespoon cornstarch
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Prepare the lemon sauce: In a small bowl, whisk together chicken stock, cornstarch, sugar, soy sauce, lemon juice, and lemon zest until smooth. Set the mixture aside.
  2. Cook the shrimp: Heat 2 tablespoons of olive oil in a large frying pan over medium-high heat. Arrange the shrimp in a single layer and cook for about 3 minutes, flipping halfway through. Season with 1/4 teaspoon salt. Once cooked, remove shrimp from the pan and set aside.
  3. Sauté the asparagus and aromatics: In the same pan, add the remaining 2 tablespoons of olive oil. Add the asparagus pieces and cook until tender-crisp, about 3 to 4 minutes. Season with 1/4 teaspoon salt. Stir in minced ginger and garlic, cooking for an additional 30 to 45 seconds to release their aroma.
  4. Add lemon sauce and combine: Pour the prepared lemon sauce into the pan with asparagus. Return the cooked shrimp to the pan and stir everything together. Let the mixture simmer for about 1 minute until the sauce thickens and coats the ingredients.
  5. Serve: Remove from heat and serve the shrimp and asparagus stir fry immediately while hot.

Notes

  • You can substitute chicken stock with vegetable broth for a lighter flavor.
  • Adjust the amount of lemon juice based on your preference for tanginess.
  • For a gluten-free version, use tamari instead of soy sauce.
  • Ensure shrimp is not overcooked to maintain its juiciness and tenderness.
  • Optional garnish: fresh chopped parsley or green onions.
