  • 2 cans (15 ounces each) butter beans, drained and rinsed
  • 1 cup vegetable broth or water
  • ½ cup canned coconut milk

  • ¼ teaspoon black pepper
  • juice of ½ lime
  • chopped fresh cilantro for garnish

Instructions

  2. Add aromatics and spices: Stir in garlic, ginger, curry powder, cumin, turmeric, and red pepper flakes. Cook for 1–2 minutes until fragrant.
  3. Cook beans: Add butter beans and coat in the spices. Pour in vegetable broth and coconut milk, season with salt and pepper. Simmer uncovered for 10–12 minutes until thickened.
  4. Finish and garnish: Remove from heat, stir in lime juice. Garnish with fresh cilantro before serving.
