For the Savory Curried Butter Beans:
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon curry powder
- ½ teaspoon ground cumin
- ¼ teaspoon turmeric
- ¼ teaspoon crushed red pepper flakes (optional)
- 2 cans (15 ounces each) butter beans, drained and rinsed
- 1 cup vegetable broth or water
- ½ cup canned coconut milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
- juice of ½ lime
- chopped fresh cilantro for garnish
Instructions
- Heat olive oil: In a large skillet over medium heat, add olive oil. Sauté diced onion for 4–5 minutes until softened.
- Add aromatics and spices: Stir in garlic, ginger, curry powder, cumin, turmeric, and red pepper flakes. Cook for 1–2 minutes until fragrant.
- Cook beans: Add butter beans and coat in the spices. Pour in vegetable broth and coconut milk, season with salt and pepper. Simmer uncovered for 10–12 minutes until thickened.
- Finish and garnish: Remove from heat, stir in lime juice. Garnish with fresh cilantro before serving.
