Instructions
- Heat the Pan: In a large skillet, heat the olive oil over medium heat until shimmering.
- Sauté the Zucchini: Add the sliced zucchini to the skillet and sauté for 3-4 minutes, stirring occasionally, until the zucchini starts to soften but still retains some bite.
- Add the Mushrooms: Add the sliced mushrooms and continue cooking for another 3-4 minutes, until the mushrooms release their moisture and become tender.
- Add Garlic and Tomatoes: Stir in the minced garlic and halved cherry tomatoes. Cook for 2-3 minutes until the garlic is fragrant and the tomatoes begin to soften.
- Season: Sprinkle the dried oregano, salt, and black pepper evenly over the vegetables. Mix well and cook for an additional 1-2 minutes to blend the flavors.
- Finish with Fresh Basil: Remove the skillet from heat and stir in fresh basil. Add a squeeze of lemon juice for brightness, if desired.
- Serve: Transfer the sautéed vegetables to a serving dish and enjoy warm as a side or light main course.
