  • 1 pound Italian sausage (mild or hot, casing removed)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced

  • 2 celery stalks, diced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)

Additional Ingredients:

  • 1 can (28 ounces) crushed tomatoes
  • 6 cups chicken broth
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 3 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Heat Olive Oil: In a large soup pot, heat olive oil over medium heat.
  2. Cook Sausage: Add Italian sausage, breaking it apart with a spoon, and cook until browned.
  3. Add Vegetables: Stir in onion, garlic, carrots, and celery. Cook until softened.
  4. Season: Add Italian seasoning and red pepper flakes. Cook for another minute.
  5. Add Tomato and Broth: Stir in crushed tomatoes and chicken broth. Bring to a boil.
  6. Simmer: Reduce heat and simmer for 15 minutes.
  7. Cook Tortellini: Add tortellini and cook until tender, following package directions.
  8. Add Spinach: Stir in spinach and cook until wilted.
  9. Finish Soup: Lower heat, stir in heavy cream and Parmesan cheese. Season with salt and pepper.
  10. Serve: Ladle into bowls, garnish with basil or parsley, and serve.
