Description

These salted sage honey butter brioche rolls offer a delightful combination of sweet and savory flavors, featuring soft, fluffy brioche dough enriched with honey and fresh sage, then brushed with a fragrant honey butter glaze and flaky sea salt. Perfect for holiday dinners or any special occasion, they promise a tender crumb with an aromatic finish.

Ingredients

Scale

Dough

  • 4 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1/3 cup warm milk (110°F)
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1/2 cup unsalted butter, softened and cubed

Honey Butter Topping

  • 2 tablespoons chopped fresh sage
  • 2 tablespoons honey
  • 1 tablespoon flaky sea salt
  • 1/4 cup salted butter, melted (for brushing)

Instructions

  1. Activate yeast: In a small bowl, combine warm milk, yeast, and a pinch of sugar. Let it sit for 5–10 minutes until foamy to ensure the yeast is active.
  2. Mix dough ingredients: In the bowl of a stand mixer fitted with the dough hook, combine flour, remaining sugar, and salt. Add eggs and yeast mixture, mixing on low speed until dough begins to form.
  3. Add butter: Gradually add the softened butter a few cubes at a time, mixing thoroughly until fully incorporated and the dough is smooth and elastic, about 8–10 minutes.
  4. First rise: Cover the dough and let it rise in a warm place for 1–2 hours until doubled in size.
  5. Divide and shape: Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place on a parchment-lined baking sheet or in a buttered baking dish.
  6. Second rise: Cover and let the shaped rolls rise again for 45 minutes.
  7. Preheat oven and prepare topping: Preheat oven to 350°F. In a small bowl, mix melted salted butter, chopped sage, and honey for brushing the rolls.
  8. Brush and bake: Generously brush the tops of the rolls with the honey butter mixture. Bake for 20–25 minutes until golden brown.
  9. Final touch: While still warm, brush rolls with more honey butter and sprinkle with flaky sea salt. Serve warm for best flavor.

Notes

  • These rolls can be made a day ahead and gently reheated before serving.
  • For a deeper sage flavor, steep the chopped sage in the melted butter for 5 minutes before brushing.
  • Rolls can also be frozen after baking and reheated when needed without loss of quality.
