Ingredients
- 1 medium butternut squash (about 2 pounds)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh herbs (like thyme or sage), chopped
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the butternut squash noodles.
- Prepare the Squash: Slice the butternut squash in half lengthwise and carefully scoop out the seeds to create a hollow center suitable for spiralizing.
- Spiralize the Squash: Using a spiralizer or vegetable peeler, create long noodle strands from the squash halves to mimic pasta noodles.
- Season the Noodles: In a large bowl, toss the butternut squash noodles with extra virgin olive oil, garlic powder, salt, and black pepper until each strand is evenly coated with the seasoning.
- Roast the Noodles: Spread the seasoned noodles in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until the noodles are tender and caramelized.
- Add Fresh Herbs and Serve: Remove the roasted noodles from the oven and sprinkle with freshly chopped herbs like thyme or sage for added flavor. Serve warm.
Notes
- Use a spiralizer to create consistent noodles, or a vegetable peeler for ribbons if you don’t have one.
- Be sure to spread the noodles out on the baking sheet to allow even roasting and caramelization.
- Adjust the roasting time according to your oven and desired tenderness.
- Fresh herbs can be substituted with dried herbs if fresh are unavailable.
- This dish can be served as a side or a light main course.
