Description

These Ricotta Pistachio Honey Bites combine flaky puff pastry with a creamy ricotta filling, accented by sweet honey, warm cinnamon, and crunchy roasted pistachios. Perfect as a delightful appetizer or a light dessert, they offer a beautiful balance of sweet and savory notes in every bite.

Ingredients

Scale

Pastry and Filling

  • 1 sheet puff pastry, thawed
  • 3/4 cup ricotta cheese
  • 2 tablespoons honey (plus more for drizzling)
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/3 cup finely chopped roasted pistachios
  • pinch of sea salt (optional)

Egg Wash

  • 1 egg
  • 1 tablespoon water

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Prepare Puff Pastry Squares: On a lightly floured surface, roll out the thawed puff pastry slightly to even it out. Cut the pastry into 12 equal squares for individual bites.
  3. Make Ricotta Filling: In a small bowl, combine the ricotta cheese, 2 tablespoons honey, ground cinnamon, and vanilla extract. Stir until the mixture is smooth and well combined.
  4. Assemble Bites: Place a heaping teaspoon of the ricotta mixture in the center of each puff pastry square. Fold the corners slightly over the filling if desired, or leave open-faced depending on your presentation preference.
  5. Apply Egg Wash: In a separate bowl, whisk the egg with 1 tablespoon water to create an egg wash. Brush the edges of each pastry square with this mixture to help them brown beautifully.
  6. Add Pistachios: Sprinkle the finely chopped roasted pistachios over the ricotta filling on each pastry and gently press them in for better adhesion.
  7. Bake the Bites: Place the prepared pastries on the lined baking sheet and bake for 15–18 minutes, or until the puff pastry is golden brown and puffed up.
  8. Cool and Serve: Let the bites cool for a few minutes after baking. Drizzle additional honey over the top and add a pinch of sea salt if desired. Serve warm or at room temperature.

Notes

  • These bites make a beautiful and elegant appetizer or dessert.
  • For a touch of brightness, add lemon zest to the ricotta filling mixture.
  • They can be made ahead of time and reheated briefly before serving for convenience.
