Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Prepare Puff Pastry Squares: On a lightly floured surface, roll out the thawed puff pastry slightly to even it out. Cut the pastry into 12 equal squares for individual bites.
- Make Ricotta Filling: In a small bowl, combine the ricotta cheese, 2 tablespoons honey, ground cinnamon, and vanilla extract. Stir until the mixture is smooth and well combined.
- Assemble Bites: Place a heaping teaspoon of the ricotta mixture in the center of each puff pastry square. Fold the corners slightly over the filling if desired, or leave open-faced depending on your presentation preference.
- Apply Egg Wash: In a separate bowl, whisk the egg with 1 tablespoon water to create an egg wash. Brush the edges of each pastry square with this mixture to help them brown beautifully.
- Add Pistachios: Sprinkle the finely chopped roasted pistachios over the ricotta filling on each pastry and gently press them in for better adhesion.
- Bake the Bites: Place the prepared pastries on the lined baking sheet and bake for 15–18 minutes, or until the puff pastry is golden brown and puffed up.
- Cool and Serve: Let the bites cool for a few minutes after baking. Drizzle additional honey over the top and add a pinch of sea salt if desired. Serve warm or at room temperature.
