- 1 packet (2 1/4 tsp) instant yeast
- 1 teaspoon salt
- 3 large eggs
- 1/2 cup warm milk (110°F)
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
For the filling:
- 1 cup raspberry jam
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
For the topping:
- 1 egg, beaten (for egg wash)
- 2 tablespoons coarse sugar (optional)
Instructions
- Prepare the dough: In a large mixing bowl, combine flour, sugar, yeast, and salt. Add eggs, warm milk, and vanilla. Gradually add softened butter, kneading until smooth. Let rise for 1 1/2–2 hours.
- Make the filling: Cook raspberry jam, cornstarch, and lemon juice until thickened. Cool.
- Assemble the loaf: Roll out dough, spread filling, roll into a log, cut in half, twist, and place in a loaf pan. Let rise for 45 minutes.
- Bake: Preheat oven to 350°F. Brush with egg wash, sprinkle with sugar, and bake for 35–40 minutes.
- Cool and serve: Cool in the pan before slicing.
Notes
- This loaf is best enjoyed fresh but can be stored for up to 2 days or frozen for 2 months.
- For a richer flavor, use half heavy cream and half milk.
