Meringue Cookies:
- 4 large egg whites, at room temperature
- 1 cup granulated sugar
- 1/2 teaspoon cream of tartar
- 1 teaspoon vanilla extract
Raspberry Cream Filling:
- 1/2 cup seedless raspberry jam
- 1/2 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 cup fresh raspberries, mashed
Instructions
- Preheat and Prepare: Preheat oven to 225°F and line baking sheets with parchment paper.
- Make Meringue: Beat egg whites and cream of tartar until foamy. Gradually add sugar, then beat until stiff peaks form. Add vanilla.
- Pipe and Bake: Transfer meringue mixture to a piping bag, pipe rounds onto baking sheets, and bake for 1 hour.
- Cool and Fill: Let meringues cool, make the raspberry cream filling by whipping cream, folding in jam and raspberries. Spread filling on meringues and sandwich them.
