Meringue Cookies:

  • 4 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

Raspberry Cream Filling:

  • 1/2 cup seedless raspberry jam
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 cup fresh raspberries, mashed

Instructions

  1. Preheat and Prepare: Preheat oven to 225°F and line baking sheets with parchment paper.
  2. Make Meringue: Beat egg whites and cream of tartar until foamy. Gradually add sugar, then beat until stiff peaks form. Add vanilla.
