Description

This Ranch Green Beans and Potatoes recipe is a flavorful and hearty side dish combining fresh green beans and tender baby potatoes with crispy bacon and a savory ranch seasoning. Cooked in a skillet with aromatic herbs and chicken broth, this comforting dish is perfect for family dinners and pairs well with a variety of main courses.

Ingredients

Scale

Vegetables

  • 1 pound fresh green beans, trimmed and cut into bite-sized pieces
  • 4 cups baby potatoes (or 4 large potatoes, peeled and diced)
  • 1 onion, diced
  • 2 cloves garlic, minced

Seasonings & Broth

  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste

Meat

  • 6 slices bacon, chopped

Optional

  • 2 tablespoons olive oil (optional, if needed)

Instructions

  1. Cook Bacon: In a large skillet or Dutch oven, cook chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving drippings in the pan.
  2. Sauté Onion and Garlic: In the same skillet with bacon drippings, add diced onion. Cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Brown Potatoes: Add diced potatoes to the skillet. Cook, stirring occasionally, until potatoes start to brown slightly, about 5-7 minutes.
  4. Add Green Beans and Seasonings: Stir in green beans, ranch seasoning mix, dried thyme, and dried rosemary.
  5. Simmer with Broth: Pour in chicken broth and bring the mixture to a simmer. Cover the skillet, reduce heat to low, and cook for about 15-20 minutes, or until potatoes and green beans are tender.
  6. Combine Bacon and Adjust Seasoning: Once vegetables are tender, stir in cooked bacon. Taste and adjust seasoning with salt and pepper as needed.
  7. Serve: Serve hot as a hearty side dish.

Notes

  • If the skillet becomes too dry during cooking, add 2 tablespoons of olive oil to prevent sticking.
  • You can substitute turkey bacon for a leaner option.
  • Fresh herbs can be used instead of dried herbs for a more vibrant flavor.
  • For a vegetarian version, omit bacon and use vegetable broth instead of chicken broth.
  • Make sure not to overcook the green beans; they should be tender but still have a slight crunch.
