For the Chicken:
- 1.5 pounds boneless skinless chicken breasts (cut into 1.5-inch cubes)
- 2 tablespoons olive oil
- 2 tablespoons dry ranch seasoning mix
- 3 cloves garlic (minced)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (for garnish)

Instructions
- Prepare the Chicken: If using wooden skewers, soak them in water for at least 30 minutes.
- Marinate the Chicken: In a large bowl, combine olive oil, ranch seasoning, garlic, salt, pepper, and paprika. Add the chicken pieces and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for best flavor.
- Grill the Chicken: Preheat grill or grill pan to medium-high heat. Thread the marinated chicken onto skewers. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and has a nice char. In the last 2 minutes of grilling, sprinkle Parmesan cheese directly over the chicken so it melts slightly.
- Serve: Remove from grill, sprinkle with fresh parsley, and serve hot.
