  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup canned pumpkin purée
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

For the cream cheese filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven and prepare muffin tin: Preheat oven to 350°F (175°C) and line a muffin tin with 12 paper liners.
  2. Prepare muffin batter: In a large bowl, whisk together flour, sugars, baking soda, pumpkin pie spice, and salt. In another bowl, mix eggs, pumpkin purée, oil, milk, and vanilla until smooth. Combine wet and dry ingredients until just mixed.
  3. Make cream cheese filling: Beat cream cheese, sugar, and vanilla until smooth.
  4. Fill muffin cups: Fill each muffin cup with batter, add cream cheese filling in the center, and bake.
  5. Bake and cool: Bake for 18–22 minutes, cool in the pan briefly, then transfer to a wire rack to cool completely.
