Instructions
- Prepare the Filling: In a medium bowl, combine the finely chopped pecans, crushed graham crackers, and powdered sugar. Add the light corn syrup, melted unsalted butter, and vanilla extract. - Form the Truffles: Using your hands or a small scoop, roll the mixture into small balls about 1 inch in diameter. Place each ball on a baking sheet lined with parchment paper. Once all are formed, refrigerate the truffles for at least 30 minutes to firm up.
