Filling:

  • 2/3 cup chopped pecans
  • 1/3 cup brown sugar
  • 1/4 cup heavy cream
  • 1 tablespoon unsalted butter (melted)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the egg and vanilla.

  3. Mix dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.
  4. Form cookies: Roll the dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart. Make a deep indentation in the center of each cookie.
  5. Prepare filling: In a small bowl, mix chopped pecans, brown sugar, heavy cream, melted butter, and vanilla extract. Spoon about 1 teaspoon of filling into each cookie indentation.
  6. Bake: Bake for 10–12 minutes, or until the edges are lightly golden. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
