Description

Delicious no-bake Peanut Butter Crunch Bars combining creamy peanut butter, crunchy cornflakes, and a rich chocolate topping, perfect for a quick and satisfying treat.

Ingredients

Scale

Peanut Butter Mixture

  • 3/4 cup all-natural peanut butter (192 grams, runny/drippy)
  • 2 tablespoons honey (40 grams)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/3 cup peanut butter powder (30 grams)
  • 1 heaping cup cornflakes (35 grams)
  • Salt, to taste

Chocolate Topping

  • 1/4 cup chocolate chips (46 grams)
  • 1/2 teaspoon coconut oil
  • Flaky sea salt (for topping, optional)

Instructions

  1. Prepare the Pan: Line a bread pan with parchment paper to ensure easy removal of the bars once set.
  2. Make the Peanut Butter Mixture: In a medium bowl, combine the runny peanut butter, honey, vanilla extract, cinnamon, and a pinch of salt. Add the cornflakes, breaking them up with your hands as you mix, followed by the peanut butter powder. Stir thoroughly to combine until the cereal pieces are smaller and the mixture is even. Press this mixture firmly into the bottom of the lined bread pan, forming an even layer.
  3. Melt the Chocolate: Place the chocolate chips and coconut oil in a small microwave-safe bowl. Microwave in 15-20 second increments, stirring each time to prevent burning, until fully melted and smooth. Alternatively, melt the chocolate and coconut oil using a double boiler method by placing the bowl over simmering water and stirring until melted.
  4. Top with Chocolate: Pour the melted chocolate evenly over the peanut butter mixture, using the pan’s movement to spread it out. Sprinkle with flaky sea salt if desired for an extra flavor and texture boost.
  5. Refrigerate: Place the pan in the refrigerator for 15-20 minutes or until the chocolate layer hardens completely.
  6. Serve and Store: Cut into 10 equal bars and enjoy. Store leftover bars in the refrigerator to keep them firm and fresh.

Notes

  • Use runny peanut butter to ensure the mixture binds well; if your peanut butter is thick, warm it slightly to loosen it.
  • Breaking the cornflakes into smaller pieces helps achieve better distribution and texture in the bars.
  • You can substitute peanut butter powder with regular powdered peanut butter if unavailable.
  • For a vegan version, use vegan chocolate chips and ensure honey is replaced with maple syrup or agave nectar.
  • Store bars in an airtight container in the fridge for up to one week.
