- Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, ¼ cup granulated sugar, and brown sugar until light and fluffy. Add the peanut butter, egg, and vanilla extract, mixing well until fully combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and kosher salt. Gradually add this dry mixture to the wet ingredients, stirring until a soft dough forms.
- Shape Cookies: Pour the ½ cup granulated sugar for rolling into a small bowl. Scoop about 1 tablespoon of dough and roll it into a ball. Roll each ball in the sugar to coat evenly.
- Arrange on Baking Sheet: Place the sugar-coated dough balls on the prepared baking sheets about 2 inches apart to allow spreading.
