Description

These Pancake Tacos offer a delightful twist on a classic breakfast favorite. Mini pancakes are folded into taco shapes and filled with whipped cream or Greek yogurt, fresh fruit, and a drizzle of maple syrup for a sweet and satisfying morning treat.

Pancake Batter:

  • 1 cup all-purpose flour

  • 2 tablespoons melted butter

  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 banana, sliced
  • maple syrup or honey for drizzling
  • powdered sugar for dusting (optional)

Instructions

  1. Pancake Batter: In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk the buttermilk, egg, melted butter, and vanilla until smooth. Pour the wet ingredients into the dry and mix until just combined (a few lumps are okay).
  2. Cooking Pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil. Pour 2–3 tablespoons of batter per pancake and cook for 2–3 minutes until bubbles form on the surface. Flip and cook for another 1–2 minutes until golden and cooked through. Repeat with remaining batter to make about 6 mini pancakes.
  3. Assembly: Once the pancakes are slightly cooled, gently fold each into a taco shape. Fill with whipped cream or Greek yogurt, then top with fruit. Drizzle with maple syrup or honey and dust with powdered sugar if desired. Serve immediately.
