  • 2 green onions, chopped

Instructions

  1. Prepare the Sauce and Vegetables: In a large deep skillet or pot, combine water or vegetable broth, soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated fresh ginger. Bring the mixture to a boil over medium-high heat to infuse the flavors.
  2. Add Noodles and Vegetables: Add the noodles, julienned carrots, thinly sliced red bell pepper, and snap peas into the pot. Stir well to make sure the noodles are coated with the sauce and fully submerged in the liquid.
  3. Cook the Noodles: Reduce the heat to medium and cover the pot. Let the noodles cook for 8 to 10 minutes, stirring occasionally, until they are tender and most of the liquid has been absorbed by the noodles and vegetables.
  4. Thicken the Sauce: Stir in the cornstarch slurry (cornstarch mixed with water) and cook uncovered for an additional 1 to 2 minutes. This will thicken the sauce, giving it a glossy and rich texture.
