Description

This One Pot Kielbasa Pasta is a quick, hearty meal featuring savory kielbasa sausage, tender pasta, and fresh cherry tomatoes all cooked together in a single pot. With minimal cleanup and simple ingredients, this dish is perfect for busy weeknights. The addition of mozzarella cheese adds a creamy finish, making it comforting and flavorful.

Ingredients

Scale

Sausage and Vegetables

  • 1 lb (450g) kielbasa sausage, sliced
  • 1 cup (150g) cherry tomatoes, halved
  • 1 onion, chopped
  • 3 cloves garlic, minced

Pasta and Liquids

  • 12 oz (340g) pasta (penne or rotini)
  • 2 cups (480ml) chicken broth

Other

  • 1 cup (120g) shredded mozzarella cheese (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Kielbasa: Heat olive oil in a large pot over medium heat. Add the sliced kielbasa and cook until browned and slightly crisp around the edges, about 5 minutes, stirring occasionally to ensure even cooking.
  2. Sauté Onions and Garlic: Add the chopped onion and minced garlic to the pot with the kielbasa. Cook for about 3 minutes until the onions become translucent and fragrant, stirring frequently to prevent burning.
  3. Add Broth and Boil: Pour in the chicken broth and bring the mixture to a boil, ensuring the flavors meld together and the liquid heats through.
  4. Cook Pasta and Tomatoes: Stir in the pasta and halved cherry tomatoes. Reduce the heat to medium-low, cover the pot, and simmer for 10 to 12 minutes until the pasta is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
  5. Add Cheese: If using, stir in shredded mozzarella cheese until it melts and creates a creamy texture, evenly coating the pasta and sausage mixture.
  6. Season and Serve: Season with salt and pepper to taste. Mix well and serve hot for a satisfying, one-pot meal.

Notes

  • You can substitute kielbasa with any smoked sausage or chorizo if preferred.
  • For a vegetarian version, omit the sausage and use vegetable broth instead.
  • Add a pinch of red pepper flakes for some heat.
  • Use gluten-free pasta to make this dish gluten-free.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Make sure not to overcook the pasta to avoid mushiness; keep an eye during simmering.
